Banana & Cashew Muffins (Vegan/Dairy Free) 

2 Banana’s

240ml Soya Milk

8tbsp’s olive oil

400g Plain Flour

200g Caster Sugar

4tsp’s Baking Powder

1tsp Salt

1 Jar cashew butter

50g Dried banana chips

Makes 14

Measure soya, and oil into a jug. Blend bananas till smooth and add to soya/oil mix and whisk. Place flour, sugar, baking powder and salt in a mixer and mixing slowly gradually add oil/milk mix. Mix till smooth then whisk in cashew butter and banana chips. Divide mixture between muffin trays lined with muffin cases and bake @ 180 for 20 – 25 mins till well risen and golden brown.
